Creamy Ham and Onion Egg Scramble with Fresh Herb Garnish

A cozy, quick breakfast-for-dinner using eggs, ham, onions, milk, and plenty of fresh cilantro (or mint) for brightness. Perfect for using those dependable onions and farm-fresh eggs/milk.

Ingredients (serves 4):

• 8-10 eggs
• 1 cup fresh local milk
• Ham (half/steaks or diced portions, about ½-1 lb, chopped)
• 1-2 onions (red/Spanish), diced
• 1 bunch fresh cilantro, Parsley or other greens
• 2 tbsp oil or butter
• Salt, pepper, and optional garlic or basil sea salt
• Optional: fresh spinach, green peppers or chard

Instructions:

1. In a bowl, whisk eggs with milk, salt, and pepper until smooth.
2. Heat oil in a large skillet over medium heat. Add diced onions, peppers and chopped ham; sauté 5-7 minutes until onions soften and ham is lightly crisped. Add greens (if desired) and stir until wilted
3. Pour in the egg mixture. Cook, stirring gently, for 4-6 minutes until eggs are softly scrambled and creamy (don't overcook!).
4. Remove from heat, stir in half the chopped fresh cilantro (and mint if using) for fresh flavor.
5. Serve hot, garnished with the remaining herbs on top. Add a sprinkle of basil sea salt for extra pop.
